From the creative culinary mind of Kelly Whitaker of Id Est, comes SHEEP, a three-month residency inside the Clayton Hotel & Members Club in Cherry Creek. SHEEP presents a new expression of The Wolf’s Tailor story, magnifying the focus on elemental ingredients shaped by fire, smoke, and season to bring guests closer to the source and invite exploration. SHEEP opens on the property’s sixth-floor rooftop and is available for a limited residency from July 8th through October 4th, 2026.Whitaker is one of the most widely-respected creatives in America’s culinary community with four Michelin-recognized restaurants and two James Beard Mentions. His years of impact work within Colorado’s regenerative food systems is indelible, resulting in a two Michelin Green Stars. As Id Est’s first limited-time residency, SHEEP offers a new moment for diners to experience The Wolf’s Tailor (Two Michelin Stars) and Whitaker’s creative energy during Colorado’s most bountiful time of the year, summer.
