Execution and balance remain central to every dish.However, FAN's richness does not stop there: the restaurant was founded by Coco together with his childhood friends Romina and Santiago, both of Cantonese descent. As a result, FAN is not only Japanese-Peruvian, its also Cantonese, French, Spanish, and, most importantly, constantly evolving.For us, FAN is about celebrating the beauty of cultural exchange, learning from others, and discovering ever new ways of embodying Umami.This is what we call Neo-Nikkei cuisine.
