While seasonally led, a few classics remain on the menu always, including the Palazzo ham with colatura hot sauce and focaccia; stracciatella with anchovies; mafaldine with spanner crab, sea blight, uni butter and chilli; and the agnolotti dal plin to name a few. To drink, an 600-strong wine list focusing on low intervention Italian, Australian and French wines.

A sherwal is a traditional, multi-layered baggy men’s trousers worn in various areas of the Mediterranean. Centuries old, it is a rare sight nowadays, except in remote villages and at traditional cultural ceremonies and, well, at our restaurant. Why name our restaurant after an archaic pants? Because, somehow, this pair of comfortable pants has found its way into our modern world, with little tweaks here and there taking the form of harem pants or baggy jeans, fusing the old with the new. And this is what we want to do. We want to take old culinary masterpieces from the Mediterranean and fuse them together, with new flavours here and there, adding new colours and new tastes to the table.
