In Kagoshima, am atemberaubenden Vulkanberg Sakurajima an der südlichsten Spitze Japans, wuchs Tojo im Nachkriegsjapan auf. Als junger Mann reiste er nach Osaka, wo er im berühmten Ohnoya Restaurant, einem von Japans führenden Ryotei, einem sehr traditionellen Restaurant der Extraklasse, eine Ausbildung erhielt. Während der jahrelangen 16-Stunden-Tage im Ohnoya sammelte Tojo ein enzyklopädisches Repertoire von rund 2000 traditionellen japanischen Rezepten, die er auch heute noch im Gedächtnis hat. Hier entwickelte er auch die Kunst, den besten und frischesten Fisch sowie andere Produkte auszuwählen. Aus der Erkenntnis, dass seine eigene Leidenschaft für neue Ideen ihn über die damals engen Grenzen der japanischen Küche führte, kam Tojo 1971 nach Nordamerika, wo er spürte, dass eine multikulturelle Bevölkerung ohne Vorurteile seinen Ideen aufgeschlossener gegenüberstand. Sein perfektes Publikum fand er in Vancouver.
