Das Barbeque entstammt dem Süden der USA, wo Köche lernten, wie sie die Fleischstücke langsam über Feuerstellen braten, um sie möglichst zart zu machen. Der Rauch des schwelenden Holzes gab dem Fleisch seinen unverwechselbaren, rauchigen Geschmack. Dieser Prozess konnte mehrere Stunden dauern und machte das Fleisch zart und saftig. Der preisgekrönte Smoker wurde aus den USA importiert und so gebaut, dass der Garvorgang dem des ursprünglichen Prozess über den Feuerstellen entspricht. Verwendet wird traditionell amerikanisches Hickory- und Mesquite-Holz, um dem Fleisch seinen vollen Rauchgeschmack zu geben. Das Fleisch verbleibt für bis zu 16 Stunden im Smoker.
