Sassafras is an intimate, fine-dining restaurant overlooking Betterton Beach that celebrates Mid-Atlantic and Chesapeake seafood. Local and foraged produce and wild fish caught in nearby waters mingle with the smoke of our crackling fire. In our own way, we tell the story of this place and this time. Join us, won't' you?

Led by Chef Paul Edward, Sassafras welcomes guests for a dinner four nights a week, with a single seating each evening at our Chef's Counter.

Located in a restored bayside cottage in Betterton, Sassafras offers a 12-course tasting menu inspired by the rhythms of the Chesapeake and the surrounding region.

Seating is limited, and reservations are required.

    At the heart of our open kitchen, the Chef’s Counter offers an intimate front-row seat to the evening’s preparations. With just eight seats, this experience is personal and immersive—guests are served directly by Chef Paul Edward and Sommelier Scott Matthew. The twelve-course, prix fixe tasting menu features hyper-seasonal modern Chesapeake Cookery, and changes daily based on the availability of local products. Our fish are wild caught from Mid-Atlantic and Chesapeake waters, except for a stunning caviar from wild caught Mississippi River sturgeon. In the heat of summer we're enjoying softshell crabs, Rockfish, invasive species, heirloom tomatoes, squash blossoms, foraged greens and berries, and much more. Offered, at an additional charge, are fine potations by the glass, and three beverage pairings: alcoholic, non-alcoholic, and a blend of both. PLEASE NOTE: We are happy to accommodate tree nut allergies and pescatarian diets with at least 7 days’ notice—please make a note on your reservation, and email us at eat@restaurantsassafras.com to confirm. Kindly note that we are unable to accommodate other dietary restrictions or allergies. We recommend ensuring all of your accompanying guests are fully aware of our allergy and dietary restriction policies. In the event that you have an allergy or dietary restriction that we are unable to accommodate, you may elect to skip courses--we would be happy to pack your course for someone at home to enjoy. A 22% service charge is included in the prepaid reservation total and will also be applied to any additional purchases during your visit. Additional gratuity is not expected. We are happy to open and serve to you special bottles of wine that you've been saving. Our corkage fee is $75 per 750ml bottle. Doors open at 6:30pm. Dinner service begins at 6:45pm. We kindly ask that you refrain from ringing early, as we are busy preparing for you.

    This is a unique and very special dining experience. The ambience, the intimacy of dining with only a few people, and in conversation with the chef and the absolutely spectacular food made for a memorable evening that I look forward to repeating! Although it is very expensive, no doubt, it is like no other dining experience that one would normally have.

    We had an incredible experience at Sassafras, a true hidden gem in our small town of Betterton. This intimate 8-seat chef’s counter delivers a dining experience that rivals top-tier spots in NYC – which makes sense, as the front-of-house host Scott brings his expertise from a high-end Manhattan restaurant. Alongside Chef Paul, the duo provides warm, approachable and genuinely thoughtful service from the moment you walk in. The 12-course tasting menu was a celebration of local ingredients, with a strong emphasis on seafood – fresh, inventive, and beautifully presented without being fussy. Each course was balanced and surprising in the best way. It’s clear that Chef Paul is deeply passionate about the craft and the region’s bounty. The only small drawbacks: the space doesn’t make use of the stunning beach view, and with a party of four, conversation across the chef’s counter can be a bit tricky. Still, the food and hospitality more than make up for it. Sassafras is a special, elevated experience and we’re lucky to have it right here! We highly recommend for food lovers looking for something truly unique and memorable.

    Fabulous, unique and personalized experience. Well worth the money (yes, even at $200/pp)! You will be full and satisfied after the 12 courses! Chef Paul is creative and informative about his dishes and host Scott anticipated our every need. We will be back!

    The food and atmosphere were fantastic. Chef Paul discussed all of the courses, including the food sourcing as well as the ingredients that was very entertaining and informative. I really did not know that MD had lobsters!

    What an experience! The food was amazing let alone the fact that it is all locally sourced by the chef. He can tell you where every single ingredient was caught, grown or foraged. We will be back!

    Sassafras is incredible. We had an outstanding time with delicious food, super attentive service, and delightful ambiance. Chef Paul and Scott take great care of each guest and provide an intimate (and filling!) experience. They clearly care about the food they provide, as well as their suppliers, and most importantly, their guests. We thought about the food for days (and had plenty for the next day!). We can't wait to go back and heartily recommend the restaurant. Treat yourself and enjoy!
