From the private transfer to and from that was scheduled for us to the last bite of dessert we felt emersend in true Jamaica. I had a couple questions prior to our arrival and communication with Mark was fantastic. Chef Alecia provided a memorable dinner that was as much educational as delicious. The location is so quaint and loved the walk around the farm to experience the beautiful surroundings. We visited on a Wednesday and the African Drummers were a great touch. If you are a foodie looking for an adventure off the beaten path this is a must! The place is in the Canaan Mountains and about 45 minutes away from Negril but sure worth the drive on a dirt road with sugar canes fields on both sides of the road. \n\nThen you arrive at a gem in the jungle. You can see and feel the love that has been put into the place. You get welcomed with a fresh squeezed fruit drink before you get invited to tour the premises and learn about the fruits and vegetables they grow. Two of their pickneys (children) were eager to show us around with their puppies by their side.\n\nWhen we came back, wet towels were given out to refresh ourselves before we sat down for dinner. We must have been maybe 25 people attending that night.\nZimbali is the labor of love of Mark Swainbank and his wife Alicia, who was our chef and the one explaining the nutritional properties of our food. Made us appreciate it even more. It was a 5 course dinner with optional wine and everything from the taste, the ambiente and Alicia's witty and funny comments were entertaining and informative. \n\nThank you Alicia, Mark and staff for this experience that never gets old. This tour has been a Jamaican favorite for over 15 years. This is a small, Jamaican family run Business located in the hills about 30 minutes outside Negril. Wednesdays and Fridays have African Drumming as well. Choices of Fish, Shrimp, Chicken or Vegan/Vegetarian are available.
Roundtrip Transport is available from anywhere in Negril for $20/prsn and we pickup at 4pm...Just let us know where.

Mountain Cooking Studio
Our cooking tour begins with a Zimbali greeting & introduction while sipping a freshly made fruit juice.
Then "Fudd" our farm manager leads a tour of the farm and then back to the cooking studio for a fun-filled cooking demonstration which includes a bottle of wine/couple.
Both lunch and dinner consist of an appetizer, main course, and dessert, w/ dinner having an extra appetizer as well.
There is a choice of main course dishes between fish, chicken, shrimp or vegan/vegetarian. Gluten free is a welcome option as well.
Don't be afraid to dress casual and wear or bring tennis shoes for the farm tour
Mountain Cooking Studio Specials
We offer either lunch or dinner tours Monday- Saturday (No lunch on Wednesdays).
Reservations are a necessity as space is limited.
The 4-course lunch is $70/person and the 5-course dinner is $89/person. We also offer round trip transport from anywhere in Negril for an extra $20/person- which makes the totals w/ transport $90 and $109/person respectively. Wednesday & Friday dinners are special as we have our African drummers perform.
A reservation is suggested as we do limit our tours to 20 people.
All we need to know for a reservation is day, time, # of people + name and what hotel you are staying. Zimbali Requires a 50% deposit for reservations of parties of 6 or more. We accept Visa/Mastercard or Paypal.
Meals
At Zimbali Retreats, your meals are our highest pleasure.
When checking in, all guests receive a fresh fruit juice.
Our juices are made fresh daily by our very own juic-ologist Auntie Miss Dee. Hand squeezed and heavy on the Jamaican ginger, you will find yourself looking forward to each day's new creation.

Questions about allergies, traditions, like & dislikes & spice level help the chefs to tailor your meals to optimize your Zimbali Foodie experience.
At Zimbali we specialize in Chicken, Fish, Conch, Lobster, Vegetarian and Vegan options
served in many delightful ways; however no red meat is ever served.
Meals are usually served on our Villa back porch with views overlooking the farm.
This is a time where you really meet new friends and share your experience with others who have just happened to cross your path in this beautiful place:) However, meals can always be taken in your room or in our Bar area as well. Like all food served at Zimbali, we are constantly trying to maximize our farm to bring you the freshest foods and fruits available.
Zimbali does not use a menu.
Daily our chefs prepare your meals with love and creativity using the freshest ingredients available. Your taste buds will have a front row seat for this Jamaican fusion journey- All you have to do is sit back and enjoy the ride
Snacks are always available in your room and we use a simple selection of Jamaican made snacks
such as coconut cookies, Ginger biscuits, Banana & Plantain chips and whatever else we can find that looks good. Jamaican coffee is always brewing in a self-serve style.

Located in a tropical mountain valley, complete with river and spring, this farm is the greatest of all Mother Nature's gifts.
And it is this gift that allows Zimbali Retreats to achieve almost 100% off grid status. In this paradise we have planted over 500 fruit trees of all varieties and over 700 pieces of fruit from pineapple to banana and plantain.
This farm is 100% organic, and only organic fertilizers and compost are used
This leaves us cutting a lot of grass and pulling a lot of weeds by hand; we perform this work in thanks, as a labor of love. As vegetarians, we derive as much as 75% of our food and spices from "our back yard". We believe that in the future, people are going to want to know more where their food comes from.

Fresh Fruits
This farm was planted with health and self-sufficiency as the goal and has many rare fruits.
Some examples are: Coconut, banana, plantain, pineapple, avocado, mango, sour soup (otherwise known as Graviola- this is considered a new cure for cancer), cashew, mountain sop, star apple, star fruit, walnut, black zapote, Ackee, lychee, lemon, lime, noni, papaya, cocoa, 5 kinds of orange, grapefruit, tangerine, ateoke apple, sasumba and plum.

Working with the seasons, many favorites are Mango, Sour Sop, Sorrel and Pineapple as well as many Ms. Dee "secret" combinations.
Jamaican ginger is second to none and its health benefits and back of the tongue "zing" and make every juice reach to the next level of flavor.

Our family of five enjoyed our time Zimbali's Mountain Cooking Studio. From the private transfer to and from that was scheduled for us to the last bite of dessert we felt emersend in true Jamaica. I had a couple questions prior to our arrival and communication with Mark was fantastic. Chef Alecia provided a memorable dinner that was as much educational as delicious. The location is so quaint and loved the walk around the farm to experience the beautiful surroundings. We visited on a Wednesday and the African Drummers were a great touch. If you are a foodie looking for an adventure off the beaten path this is a must! Thank you Zambali retreats for themories made!

The kindness and attentiveness of staff was better than any other place we went in Jamaica. It was such an amazing experience and we had so much fun interacting with the chef. The food was authentic and so tasty! Would definitely recommend! And would recommend the transportation offered by the hosts since roads are a bit rough going up. Would definitely recommend this experience! 10/10

This is a must have experience! Farm to table menu and Chef Alicia is 5 star. Definitely our best meal in Jamaica Of course organic fruits and vegetables but so superbly done you’ll wonder why you don’t eat like this all the time. A five course meal with choices of different shrimp and chicken main dishes. We’ll be back here for sure!

This was my 4th time of the Zimbali Farm to Table experience and I could not wait to share it with friends who were just as impressed as I am over and over again. The place is in the Canaan Mountains and about 45 minutes away from Negril but sure worth the drive on a dirt road with sugar canes fields on both sides of the road.
Then you arrive at a gem in the jungle. You can see and feel the love that has been put into the place. You get welcomed with a fresh squeezed fruit drink before you get invited to tour the premises and learn about the fruits and vegetables they grow. Two of their pickneys (children) were eager to show us around with their puppies by their side.
When we came back, wet towels were given out to refresh ourselves before we sat down for dinner. We must have been maybe 25 people attending that night.
Zimbali is the labor of love of Mark Swainbank and his wife Alicia, who was our chef and the one explaining the nutritional properties of our food. Made us appreciate it even more. It was a 5 course dinner with optional wine and everything from the taste, the ambiente and Alicia's witty and funny comments were entertaining and informative.
Thank you Alicia, Mark and staff for this experience that never gets old. It sure was the highlight of our trip.

Our second visit, this time with friends. Mark and his staff offers a unique experience to Negril visitors. The Chef provides a delicious and insightful dinner. The farm to table ingredients make for great tasting offerings. Not to be missed on your trip to Negril!

I visit Zimbali every time I’m in Negril, and it never disappoints. The chefs are not only talented but also engaging, sharing their knowledge about how different foods benefit various organs.
