In Sachen Stil rangiert dieses Lokal zwischen zwei anderen Restaurants des Unternehmens. Das Monopole, die Weinbar mit Restaurant des Unternehmens, ist leger, locker und spaßig. Dagegen bietet das neue Bentley im Radisson Blu Hotel ein gehobeneres und spezielleres Restaurant-Erlebnis. Auch David Myers gehört zum Team. Während seiner 20-jährigen Karriere hat er bereits Restaurants in London und Sydney gemanagt und nun bringt er seinen reichen Erfahrungsschatz auch in diese Zusammenarbeit ein.

Our mission is to showcase Australian sustainably sourced seafood, prepare it expertly and serve it simply.
We work closely with fisherman around Australia to source only the best seafood. All of our fish is purchased whole and processed in our custom designed Fish Butchery just down the road from the restaurant. Some species of fish are dry aged in our custom designed cool rooms, allowing us to intensify and clarify the flavour of certain species as well as achieve maximum skin crispness.
Our sustainable approach and appreciation of Australian fish is displayed by our use of the whole fish, including offal where appropriate.
Our attention to detail in all things fish, flows down into everything we do; from our vegetable preparations, our exquisite desserts, and our wine list.

Claret Club is a wine bar and restaurant in the heart of Darlinghurst, just a short stroll from Hyde Park, Sydney CBD and Oxford Street. We serve a focused selection of wines and relaxed European dishes prepared by our head chef Andy Buchanan. Our restaurant has limited seating, a full a la carte offering and tends to book up quickly, while the wine bar downstairs is always open for walk-ins for light snacks, share plates and drinks, and opens onto the buzzy outdoor dining on atmospheric Stanley Street.

Pan Divino is an Italian restaurant in the heart of Surry Hills, offering seasonal menus shaped by refined technique and a warm heritage setting. Ideal for intimate dinners, celebrations, and group dining, the experience is elevated without feeling formal.

Set within a beautifully restored 1912 building, the space blends vintage charm with rustic elegance inspired by the Italian countryside.

At the helm is Head Chef Adam Bryce, whose culinary career spans over 15 years and is defined by a deep connection to Italian cuisine and seafood. Beginning his apprenticeship on Crown Street, Adam refined his craft at Jamie Oliver’s Italian and Otto before moving into seafood-focused kitchens.

His passion for produce-driven cooking led him to North Bondi Fish, where he became Head Chef, followed by leading the kitchen at the iconic Doyle’s Seafood Restaurant. At Pan Divino, Adam brings together Italian flavours, refined technique, and a strong seafood focus.
