Our chef, Kevin Aves has worked in his hometown Mexico City at Michelin-starred establishments. In Montreal, he later held chef positions at le bar P2 and Chez Delmo.Combining gourmet cuisine, french techniques and mexican flavours. Chef Aves, has found his culinary identity, both precise and welcoming.His cooking showcases local and seasonal products, while emphasizing close collaboration with regional producers and product traceability.
