Küchenchef Thomas Riordan und Chef de Cuisine Ryan Swanson verbinden das Wesen der Stämme Pima und Maricopa mit regional angebauten Zutaten aus dem Indianerreservat Gila River Indian Reservation, um unvergessliche Gerichte zu kreieren. Im KAI ist sportlich elegante Businesskleidung erwünscht. Ausgeschlossen sind Hüte, Jeans, T-Shirts und kurze Hosen für Damen und Herren und auch offene Sandalen für Männer. Passende Hüte zu einem Kleid für Damen sind zulässig.
